5-Ingredient Easy Parsley Sauce

Herbs are often an overlooked remedy to get essential vitamins and minerals. Historically, our ancestors used them to enhance the taste and nutritional value of the food they paired them with. They often prepared meals with fresh opposed to dried herbs. Fresh herbs are more nutritious than dried and provide important vitamins and minerals to nourish the body.

Since fresh herbs have a great amount of health benefits, I've been experimenting with including more fresh herbs into my diet. Making healthy herb sauces with nourishing ingredients was one of my solutions.

This 5-ingredient parsley sauce is an easy, versatile, and delicious way to consume more plant-based nutrients. Parsley contains nutrients such as vitamin C, vitamin A, iron, potassium, magnesium, and antioxidants. This nutrient dense sauce pairs well with meats, vegetables, and starches. I particularly love it on steak, fish, and boiled yucca.

Coupling fresh parsley with fresh garlic really packs an antioxidant punch. I love garlic and use it frequently when cooking. Below you will see the option for 2 or 3 large garlic cloves. I opt for 3 large garlic cloves when making this recipe. (Vampires won't be around my house this Halloween!) Try this recipe and let me know what you think!

Ingredients

  • 1 bunch of organic parsley

  • 2-3 large fresh peeled organic garlic cloves (depending on tolerance)

  • ½ teaspoon of salt (I recommend coarse kosher salt)

  • 1 stalk of organic green onion

  • 1/2 cup of high quality olive oil

Directions

  1. Clean the parsley and the green onion thoroughly. Remove the parsley leaves from the stems.

  2. Add all ingredients into a food processor and blend until smooth.

  3. Add extra ground salt or olive oil if needed and stir! Stir in pepper flakes to taste if you’d like an extra kick.
